Tomato Salad with Herb Sauce
- 4 tablespoons pine nuts
- a handful fresh basil leaves
- a handful fresh flat leaf parsley
- 1 garlic clove, peeled, chopped
- 2 tablespoons red wine vinegar
- 6 tablespoons extra virgin olive oil
- sea salt
- freshly ground black pepper
- 4 large ripe plum tomatoes, sliced
- half red onion, peeled, very finely sliced
- To make the sauce, toast the pine nuts in a dry non stick frying pan over a medium heat for about 5 minutes, until golden and nutty, tossing occasionally. Add the toasted pine nuts, basil, parsley, garlic and red wine vinegar in a food processor and pulse to a paste. With the motor still running, slowly trickle in the extra virgin olive oil to make a thick herby dressing. Season with sea salt and freshly ground black pepper to taste.
- To plate arrange the tomatoes on a serving dish,sprinkle evenly with finely sliced red onions and spoon over herby green sauce.
Tip – To increase the level of this already delicious salad, serve with lumps of buffalo mozzarella cheese.
